Crispy Chicken Thighs

Ingredients:
Chicken Thighs
Garlic Salt
Lemon
Onion
Oil
Butter
Optional Marinade:
1/3 c. Soy Sauce
1/3 c. Water
1/4 c. Oil
1-2 cloves Garlic, minced
Juice of one small Lemon
Directions:
So many ways to do this...
Pat chicken dry with paper towels (this makes the skin crispier when baking).
(Optional: marinate chicken overnight)
Heat oven to 375 degrees.
Use a baking sheet with sides so that the juices don t run off in your oven.
Cover baking sheet with foil for easy clean up.
(Optional: Stack one slice of Onion + one slice of Lemon under every piece of chicken on baking sheet, not necessary if you marinated.)
Place chicken thighs, skin side up, on baking sheet leaving at least 1.5" space between each.
(Optional: mix softened butter with salt/pepper/other seasoning of your choice. Loosen chicken skin by gently running your finger under the skin, creating a pocket but making sure to leave the edges attached. Put ~1/2 t. butter mixture under the skin of each thigh. Don t worry about spreading it around, it will spread as it melts.)
Brush top of each thigh with oil (or drizzle a little oil on top).
Sprinkle with garlic salt.
Bake at 375 degrees for 1 hour. If skin gets too dark, lay a piece of foil over the chicken during the last 10 minutes of baking.
